Keto-Vegetarian Chili

Keto-Vegetarian Chili is a spicy dish made with only vegetable and beans .

This prepared meal is delicious and healthy because it is  packed with vegetables, beans and lots of flavor!

This Keto Vegetarian meal acquired wide popularity in the U.S. During the 1960s and 1970s because of the rise of vegetarianism. It is also popular with those on a diet but requiring low carb-high fat food.

Ingredients: Green pepper, Red pepper, carrots, Zucchini, Egg plant, Parsnip, Corn, Tomatoes, Spices, Tortilla chips,black beans

Wine suggestion: Consider a malbecshiraztempranillo, or select cabernet sauvignons.

  • Heat the olive oil in a large pot over medium heat. Stir in the onion, and season with bay leaves, cumin, oregano, and salt. Cook and stir until onion is tender, then mix in the celery, green bell peppers, jalapeno peppers, garlic, and green chile peppers. Reduce heat to low, cover pot, and simmer 5 minutes.

    Mix the tomatoes into the pot. Season chili with chili powder and pepper. Stir in the kidney beans, garbanzo beans, and black beans. Bring to a boil, reduce heat to low, and simmer 45 minutes.
